True Food Kitchen feels like a mission, not a chain. A menu built around an anti-inflammatory diet, a famous doctor attached, calm rooms full of plants. That is a powerful local-wellness impression. It is still a national chain, and the money behind it is private equity.
The short answer: True Food Kitchen is a chain
True Food Kitchen is a chain. It runs 46 restaurants in 18 states, from Arizona and California to New Jersey and Virginia, and every one is owned by the parent company in Phoenix. The company is privately held by a group of investors led by Centerbridge Partners, a New York private equity firm.
It was co-founded in 2008 by Dr. Andrew Weil, the integrative medicine author, and Sam Fox, the restaurateur behind Fox Restaurant Concepts. Weil supplied the anti-inflammatory food pyramid the menu is built on. Fox supplied the restaurant machinery. Outside capital took over from there.

Who owns True Food Kitchen?
The ownership story runs through P.F. Chang's. Fox Restaurant Concepts opened the first True Food in 2008, and in 2009 P.F. Chang's extended the young brand a $10 million credit line. In February 2012 P.F. Chang's converted that debt into a 51 percent stake. Five months later Centerbridge Partners bought all of P.F. Chang's for about $1.1 billion, and the True Food stake came with it.
Centerbridge spun True Food Kitchen out as a standalone company in 2016, when it had 13 restaurants, and hired Starbucks veteran Christine Barone to run it. Oprah Winfrey made an equity investment and took a board seat in July 2018, when the chain had 23 restaurants in 10 states. In September 2022 HumanCo and Manna Tree led a round of more than $100 million; the announcement listed Centerbridge, Winfrey, Lion Capital, Weil and Howard Schultz as existing investors. Nobody has disclosed the percentages, which is normal for a private company.
The executive suite has turned over the way investor-owned chains tend to. Barone left in 2022 to run Dutch Bros. John Williams, hired from Lazy Dog in March 2023, resigned in December 2024. After an interim stretch under Jim Dunn, the board named former Hopdoddy Burger Bar CEO Jeff Chandler chief executive in July 2026, after the brand posted its first year of negative sales since 2020.
Is True Food Kitchen publicly traded?
No. True Food Kitchen has no stock ticker and has never filed for an IPO. Its shares are held by private equity and growth investors plus a handful of individuals. If you want exposure to the brand as an investor, there is no way to buy it.
Is True Food Kitchen a franchise?
No. True Food Kitchen has never franchised. All 46 restaurants are company-operated, and the 2022 capital raise was earmarked for opening more company-owned units, including smaller formats, rather than recruiting franchisees.
That distinction cuts both ways. There is no local franchisee whose savings are on the line at your neighborhood True Food. The general manager is an employee and the profit flows to Phoenix and then to the investors. The staff and the farm partners on the seasonal menu may well be local. The ownership is not.
How many True Food Kitchen locations are there?
Forty-six, in 18 states, as of August 2026. The Boulder, Colorado restaurant that opened that month was the 46th. Growth has been slow by chain standards: 23 restaurants in 2018, 42 in 2022, 46 in 2026. California has the most, with nine.
The states are Arizona, California, Colorado, Florida, Georgia, Illinois, Louisiana, Maryland, Missouri, Nevada, New Jersey, New York, North Carolina, Ohio, Pennsylvania, Tennessee, Texas and Virginia.
Why True Food Kitchen feels independent when it is not
The doctor-designed menu is the strongest signal. A real physician built the concept around how food affects the body, and Weil still shows up in the company's materials as founder and investor. That reads as a passion project rather than a corporate rollout, and in 2008 it was one.
The rooms back it up. Plants everywhere, a menu that changes with the seasons, no visible chain branding. It all says local, even though the company operates coast to coast and answers to a private equity board.
- A doctor-designed, anti-inflammatory menu that feels like a mission.
- Seasonal dishes and plant-filled rooms with no visible chain branding.
- A founder story tied to a famous author rather than a corporation.
Is that a bad thing?
Not by itself. The food is genuinely health-focused, the seasonal menu is real, the kitchens dropped seed oils in 2024, and plenty of people love eating there. Being a chain does not undo any of that.
But if you chose True Food Kitchen to support a local, independent restaurant, that is not what it is. It is a 46-unit national chain owned by private equity.
A mission statement and a famous founder do not make a restaurant independent. The ownership does.
How to find genuinely independent healthy food
Most cities have independent restaurants doing seasonal, vegetable-forward, health-minded food, often run by a single chef who cares deeply about it. They get buried under chains and ads on the usual apps.
Anything But A Chain maps only independent, locally owned restaurants and filters every chain out automatically, True Food Kitchen included. Open it, search healthy or seasonal near you, and everything you see is the real thing.
